the second fish is not a gulper eel but a
Sloane's viperfish (Chauliodus sloani)
(and yes, the scientific name was on the stamp
so you did not need that - this saves you some typing ;-) )

The rainbow runner (Elagatis bipinnulata), also known as the rainbow yellowtail, Spanish jack and Hawaiian salmon, is a common species of pelagic marine fish of the jack family, Carangidae. The species is widespread throughout the tropical and subtropical waters of the world, inhabiting both coastal as well as far offshore areas.
Chauliodus sloanei = Sloane's viperfish (Chauliodus sloani)
Sloane's viperfish (Chauliodus sloani) is a dragonfish of the genus Chauliodus, found in all tropical and subtropical oceans, at depths down to 2,500 m. Its length is between 20 and 35 cm.
